In case you'd forgotten, we recently enjoyed a fortnight of authentic Ukrainian meals cooked by D's mom. Now we're back to cooking on our own. Here's a brief listing of what's appeared in the kitchen.
Honey-Salt Eggplant Rounds from Wherever I am, you are there also
This woman is a genius! The taste of eggplant with soy sauce and caramelized honey is divine.
Italian Beef Panini Sandwiches from 5 Dinners in 1 Hour We did *not* make Italian Beef Panini Sandwiches, but we did use this idea to make regular sandwiches. Bought a giant loaf of bread, sliced it up, added ham slices and mustard, and put everything back into the bread bag and stuck it in the freezer. It's super-easy to pull one out and pop it in the oven for a snack.
Морс: a мужчина на кухне creation Last weekend D bought what he thought were blueberries at the outdoor market. I guess the 5 uah price tag should have been a clue that they were not, in fact, blueberries. They were instead what I'll call miscellaneous-juice-berry. He boiled them in a pot of water and added sugar and voila, we had морс (juice). We had tried making this last winter with different berries and it didn't taste very good so it's really heartening that our second experiment worked! It's going to be significantly cheaper to make our own juice instead of buying it at the supermarket.
Cabbage and Cucumber Salad from Natasha's Kitchen Ingredients? Great! Dressing? Eh..... Will use less sunflower oil and more vinegar next time.
Baked Broccoli Penne from 5 Dinners in 1 Hour The concept of this meal was really cool- make ahead! throw everything in a dish! no boiling pasta!- but the resulting taste was a little bland. Also, Parmesan cheese is a little pricey in Ukraine. One BIG plus though? After soaking and baking, the texture of the pasta was more like gnocchi than noodles, delish.
Ginger Fried Rice with Leeks from Wherever I am, you are there also Okay, I couldn't follow all the directions to this recipe to the letter. Ask for цибуля-порей at my farmer's market and you'll get an enthusiastic nod and a bunch of green onions thrust into your hands. Still, it's a simple recipe and perfect for leftovers.
Breakfast Enchiladas from 5 Dinners in 1 Hour I give these a 6 / 10. To be honest- I ran out of cheese so they were a little dry. D, on the other hand, heartily approved of them. As did the cat.
And then, to finish, this amazing 10-layer cake made by his wife. Yum!

Special Mention:
Had these delicious burritos at a colleague's house! His teenage daughter made them using лаваш (local tortillas) in 3 easy steps: 1) fill with sausage, chicken, bell pepper, cheese, and tomato, 2) fry on stove, 3) bake in oven.And then, to finish, this amazing 10-layer cake made by his wife. Yum!
